Simple smashed avo
A black garlic twist on a modern favourite! This simple and delicious recipe packs a serious health punch and can be whipped up in under 20 minutes using all your pantry staples. Mix in some mashed peas or add a poached egg on the side to make this your ultimate weekend breakfast.

Ingredients:
4 slices of good quality sourdough
salt and freshly-ground black pepper to season
1 tsp salted butter to spread on toast
2 tbsp olive oil
1 punnet of cherry tomatoes
2 small, ripe avocados with stone removed and peeled
50g creamy feta or goats cheese, crumbled
3-4 cloves of black garlic, thinly sliced
small handful of mint, roughly chopped
2 tbsp of freshly squeezed lemon juice
Instructions:
Preheat the oven to 180 degrees celsius and line a small baking tray with baking paper
Place the tomatoes on the tray and drizzle with half the olive oil and season with salt & pepper.
Roast tomatoes in the oven for approx. 10 min or until they begin to blister.
Place the avocado in a medium sized bowl and mash roughly with a fork. Add half the mint and the lemon juice, mash until just combined. Season to taste with salt and freshly ground black pepper.
Toast or grill sourdough bread until golden and add a smear of butter.
To serve, spoon 1/4 of the avocado mixture onto each slice of bread. Top with roast cherry tomatoes and feta/goats cheese.
Serve immediately garnished with black garlic and the extra mint. Add a drizzle of olive oil to finish and season with salt & pepper if needed.
